An easy hearty stew with tender chicken and melt in your mouth dumplings is packed with flavors and simply delicious for those cold winters.

Rotisserie Chicken and Dumplings
Instructions
  1. In a large pot over medium heat, add oil, onions, carrots, garlic, and celery. Cook until soft.
  2. Add chicken stock, peas, shredded chicken, chili powder, salt, and pepper on a soft simmer.
  3. Time to make the dumplings. Whisk milk, eggs, mixed herbs, salt, and baking powder. Gently fold in the flour until it disappears. Do not overmix this dough.
  4. Use two spoons to scoop about a tablespoon or more of dough. Carefully place them in the simmering broth and cover for 15-20 minutes.
  5. Serve with love.
